Further influenced by her tenure at Dr Ink’s Curiosities, formerly on Exeter Quay, Amy brings a wealth of knowledge and creative enthusiasm to the cocktail offering at Colson's Restaurant and Bar.

With spring in the air, Amy is infusing the essence of the season into every glass, with hints of raspberry, rhubarb, and other innovative flavours that quietly promise an awakening of the palate.
